Egg shell quality is a major concern for farmers. Downgraded eggs account for 3.5 to 12% of all eggs and this percentage increases at the end of the laying cycle. The crystalline layer of the eggshell, which is responsible of its mechanical strength, consists of 95% calcium carbonate. A good quality egg contains, on average, 2.2 grams of calcium.
